Heavenly Spice Cake
3/4 cup softened butter
1 cup granulated sugar
1-1/4 cups brown sugar
3 large eggs
2-3/4 cups all-purpose flour
1 teaspoon ground ginger
1-1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
1 teaspoon ground cloves
1-1/2 cups buttermilk
1-1/2 cups golden raisins |

Cream butter, gradually add granulated sugar and brown sugar and beat until fluffy. Add eggs, one at a time, beating thoroughly after each addition. Mix dry ingredients, setting aside 1/4 cup of them. Mix rest of dry ingredients alternately with buttermilk into first mixture, blending well. Mix raisins with the 1/4 cup of dry ingredients you set aside, making sure they are coated to avoid clumping together. Stir this mixture into the batter. Grease well a 13x9 pan, (the recyclable aluminum "casserole/lasagna" pans sold in the grocery stores work beautifully); sprinkle greased pan with flour, shaking out the excess. Put batter in pan, spreading to reach the edges of the pan. Bake at 350 degrees in an oven for about 50 minutes. Let cool completely before frosting (frosting will melt if it isn't completely cool). |

Spice Frosting
1 stick of butter
1 box of confectioners sugar
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger
1 teaspoon cinnamon
1/2 teaspoon vanilla extract
1/4 cup plus 2 tablespoons milk
Cream butter and sugar, adding some of the milk when the mixture gets too dry, (after butter and sugar are mixed). Add spices, blending well. Mix all ingredients, using only enough milk to make a light, fluffy frosting. |
